Starting a New Batch of Kefir

Usually I start a new batch first thing in the morning.

To get a batch going, I put the grains in the bottom of a jar and add milk up to about 2 inches from the top. I cover with a napkin or coffee filter and use a rim to hold it on.

I then set the jar on my kitchen counter for 24 hours.
